Desert Dine provides chef-led catering for brand activations, corporate events, and hosted stays at private properties across Palm Springs and the Coachella Valley. We coordinate menus, staffing, setup, service, and catering cleanup around your property and production schedule.

From a welcome dinner to several days of breakfasts and lunches, thoughtful hospitality helps your guests settle in and your team get on with the event. Our experience includes returning brands, visiting professional sports teams, and private-property dining.

Real experience with brands and hosted teams

White Fox Boutique has worked with Desert Dine on three catering engagements during Coachella and Stagecoach festival seasons. Our work has included planning a welcome dinner and breakfasts at a private property, refining menus with the events team, and coordinating the dining setup.

For Kopari, planning has included breakfast and lunch service across several days and a grab-and-go breakfast for early departures.

Our brand experience also includes Walmart, Target, Patrón, and High Noon. We have catered for Seattle Reign Football Club and Portland Timbers, alongside our work with Bravo Luxury Villas.

Each group brings a different brief. We bring experience working through the menu, timing, and property details that make the catering plan practical.

Catering that fits the production schedule

A brand house can have several schedules running at once. Guests may be heading out while the production crew is setting up. Talent may have a short break between appointments. A client dinner may need to begin as soon as the final presentation ends.

Share your working run of show early, including vendor access, meal windows, and the times catering needs to be cleared. Count guests, talent, and the working team separately so everyone is included. For multi-day stays, remember arrival and departure meals.

One contact on each side makes timing updates easier. Agree on who can approve changes and make sure the service plan reflects the latest schedule.

Make the property part of the plan

The kitchen and service areas deserve attention before the menu is finalized. Confirm kitchen access, appliances, refrigeration, preparation space, and the route for deliveries and staff. Check which tables, linens, serving pieces, and additional equipment are needed.

For outdoor dining, discuss shade, wind exposure, and an alternative service location. Connect the property manager with the producer and catering team early, and confirm that the proposed event use is permitted.

Your proposal should make staffing hours, equipment responsibilities, and catering cleanup clear. Whole-property cleaning and other vendors’ breakdown may sit elsewhere in the production plan.

Choose a menu that suits the experience

For a standing reception, choose food guests can comfortably enjoy while talking and moving around. For a hosted dinner, consider whether shared dishes or individual courses better fit the atmosphere and timing.

Desert Dine’s menus offer starting points including a family-style taco experience, Mediterranean dining, and a steakhouse dinner. Tell us about the audience, presentation requirements, and how formal or relaxed you want the meal to feel.

Gather dietary requirements in advance, distinguish preferences from allergies, and confirm suitable options with the catering team. For guests staying several days, meal variety and dependable timing deserve attention alongside the opening dinner.
